Looking for a scary-good treat? Try these high protein, low sugar Spooky Spider Chocolate Protein Balls by Kara Lang Romero! Perfect for a sweet treat or post workout.
Nutrition/ Serving (3 balls per serving):
1/3 cup Pitted Dates (packed)
2 cups Black Beans (cooked)
1/2 cup Chocolate Protein Powder
1/3 cup All Natural Peanut Butter
1/2 tsp Sea Salt
1 tbsp Cacao Powder
1/2 cup Organic Dark Chocolate Chips (optional) - stevia-sweetened chocolate chips *Recommended for reduced sugar*
Optional to make spiders:
1 cup Whole Wheat Pretzel sticks or sub gluten free pretzel sticks
1/4 cup Mini Marshmallows (“Dandies” vegan brand recommended)
Line a baking sheet with parchment paper.
Combine dates, black beans, chocolate protein powder, peanut butter, sea salt, and cacao powder in the bowl of your food processor. Process until smooth, scraping down the sides as necessary.
Roll the dough into 1-inch balls and place on the covered baking sheet. You should have about 3 balls per serving.
To make the optional chocolate drizzle: melt the chocolate chips in a double boiler and drizzle over balls. (Add a tablespoon or two of coconut oil to thin, if necessary.)
To make spiders, cut 4 pretzel sticks in half and add four "legs" on each side and two chocolate chips or mini marshmallows (“Dandies” vegan marshmallows recommended) for eyes. Freeze at least 1 hour to set. Enjoy!
