3/4 head Cauliflower (cut into florets)1/3 tsp Cumin1/3 tsp Chili Powder
1/3 tsp Smoked Paprika
1/4 tsp Sea Salt (divided)
1 can Refried Beans (or cooked black beans)
2 tbsps Red Onion (clove, minced)
3/4 tsp Lime Juice
1/2 cup Quinoa
3 tbsps Cilantro (finely chopped, optional)
1 tbsp Avocado Oil
1. Preheat the oven to 425ºF, and line a baking sheet with parchment paper or use a Silpat mat. Toss the cauliflower with the oil, cumin, chili powder, smoked paprika, and half the sea salt. Place in the oven and cook for 25 minutes, flipping halfway through.
2.Cook quinoa according to package. While the cauliflower is baking and the quinoa is cooking, add the beans to a small pot and heat, stirring occasionally.
3. In a small bowl, add the avocado, red onion, cilantro, remaining salt, and lime juice. Mash to make guacamole.
4. Divide the quinoa and cauliflower into bowls and top with the beans and avocado.
5. Sprinkle more cilantro on top, if using. Top with (optional) hot sauce. Serve and enjoy!
