Spicy Roasted Cauliflower Bowls

3/4 head Cauliflower (cut into florets)⁣1/3 tsp Cumin⁣1/3 tsp Chili Powder⁣

1/3 tsp Smoked Paprika⁣

1/4 tsp Sea Salt (divided)⁣

1 can Refried Beans (or cooked black beans)⁣

1 Avocado⁣

2 tbsps Red Onion (clove, minced)⁣

3/4 tsp Lime Juice⁣

1/2 cup Quinoa⁣

3 tbsps Cilantro (finely chopped, optional)⁣

1 tbsp Avocado Oil⁣


1. Preheat the oven to 425ºF, and line a baking sheet with parchment paper or use a Silpat mat. Toss the cauliflower with the oil, cumin, chili powder, smoked paprika, and half the sea salt. Place in the oven and cook for 25 minutes, flipping halfway through. ⁣

⁣2.Cook quinoa according to package. While the cauliflower is baking and the quinoa is cooking, add the beans to a small pot and heat, stirring occasionally. ⁣

⁣3. In a small bowl, add the avocado, red onion, cilantro, remaining salt, and lime juice. Mash to make guacamole. ⁣

⁣4. Divide the quinoa and cauliflower into bowls and top with the beans and avocado. ⁣

⁣5. Sprinkle more cilantro on top, if using. Top with (optional) hot sauce. Serve and enjoy!⁣
